of good knife skills; holding, chopping, sharpening, and knife
storage. We will practice cutting a variety of vegetable shapes,
including dice, julienne, mince, and brunoise. Students will receive

art of the ‘cue is explored with Chef Josh Baum from Johnny
Vee’s favorite BBQ joint. Josh shares tips and hints for getting
the most out of your smoked meats as we prepare a menu of
goodies perfect for kicking off the summer season, including
Green Chile Cornbread, Cowboy Beans, Green Chile Slaw, and
a variety of smoked meats & ribs slathered with Josh’s Secret
Sauce. We will also demonstrate the Cameron’s Stovetop Smoker

Goat Cheese & Brown Sugar Vinaigrette, Sturgeon Fillet “Sous Vide,”
with Baby Artichokes, Snap Pea Salad, and Confit Potatoes, and for
dessert Warm Coconut Tapioca with Exotic Fruits. We will demo the
