Monday, January 27 @ 6 PM-9 PM -$78

Nothing is more delicious and comforting than a slow braised dish

perfect for hearty meals and cold weather. Tonight we explore the

major brands of braising cookware including Le Creuset, Staub, and

Chantal as well as Fissler Pressure Cookers and prepare a terrifically

tender meal that includes: Green Chile Stew, Cuban Chicken Fricassee,

Lamb & Fennel Tagine, Penne with Classic Italian Ragu Meat Sauce,

Smoked Beef Chili, and Poached Pears in Red Wine Syrup with Basil Ice

Cream for dessert. Warm up with this yummy menu! (Hands-On)



Tuesday January 28 @ 6 PM-9 PM -$78

Lemon grass, ginger, kaffir lime, garlic, galangal, and chiles all

bubbling in a pot or wok-that’s truly tasty Thai, perfect for the

cold weather. Join this culinary celebration of the delicious flavors

of Thailand as we prepare: Curried Butternut Squash Soup,

Bangkok Fisherman’s Soup, Fat Noodles with Curried Beef &

Sweet Black Bean Sauce, Spicy Stir-Fried Shrimp with Chiles &

Basil, Coconut Rice, and Black Sticky Rice Pudding. Cook like a Thai

Master Chef after taking this informative class!  (Hands-On)




Wednesday January 29 @ 6 PM-9 PM -&78

Tonight we explore the fabulous chiles of Mexico and New Mexico

and create a menu that shows off their complexity and versatility.

Pasilla, guajillo, chipotle, ancho, chiles de arbol, and poblano

will be covered in this informative and delicious class. Our Menu

includes: Tortilla Soup, Queso Fundido with Roasted Poblanos,

Shrimp Empanadas with Guajillo Masa & Two Salsas, Classic

Chicken Mole, Arroz Verde, and Chocolate Chile Torte with Tres

Leches Ice Cream. Deliciosa! (Hands-on)

 Our Chef:

Chef John (Johnny Vee) Vollertsen is director of

the 12 year old Las Cosas Cooking School in

Santa Fe. His cooking and restaurant management

career has taken him to New York City, Sydney,

and Wellington, New Zealand. John writes a

regular food column for The Santa Fe New

Mexican and is the Food + Dining Editor for The

Santa Fean magazine.

Once your class has been reserved, please make a note of the day as we do not

send out reminder notices. All classes must be paid for in advance to hold

your space. Cancellations: If for any reason, you find it necessary to

 cancel your reservation, you must notify us 7 days in advance to receive

 a refund or class credit. If you cannot attend at late notice, you may

 send someone in your place. We reserve the right to cancel any class due to

 insufficient enrollment. We will contact you by phone and refund your fee or issue you

class or store credit. All classes are 3 hours long unless otherwise stated in

course description. General Information: Fees for classes include instruction,

 recipes, sampling of foods prepared & beverages.
