The green chile harvest is here; be ready with this great menu
celebrating New Mexico’s favorite food. We’ll make Chile Rellenos
with two batters and two fillings, Green Chile & Chicken Stew,
Green Chile Scalloped Potatoes, Sauteed Spinach with Green
Chile, and believe it or not, a Lime Ice Cream with Candied
Green Chiles & Pinon Brittle. This class is a must for chile addicts
or visitors to Santa Fe who want to see what the fuss is about.

All across the world the hottest new ingredient of 2010 is the
delicious pork belly. Tonight we explore this tender, tasty and
inexpensive cut of meat and create a whole menu to show off its
versatility. Our menu includes Ramen Noodles with Pork Belly,
Steamed Pork Buns with Cucumber Pickle, Sweet & Sour Kimchi
Stew, Consomme with Oysters, Pork Belly and Cabbage, and Pork
Belly Wraps with Mustard Sauce. Join this unabashed pork-fest.

Fri. July 23 @ 6 PM-9PM -$75
Tonight we get down and sticky with a menu that celebrates
the best part of summer; bar-be-que. We will spice up, marinade
and brine a variety of meats and then fire up the grill, cook them
and serve them with some killer mopping and sopping sauces.
Our menu includes: Johnny Vee’s Slap-in-the-puss BBQ Sauce,
Santa Fe Chile Rub, Chicken with Chile-Pecan BBQ Sauce,
Ribeye Steak with Molasses-Bourbon Steak Sauce, Fried Green
Tomatoes, Grilled Poblano Cornbread, Smoked Potato Salad, and
for dessert, Frozen Peanut Butter Crunch Pie. Finger lickin will be
encouraged in tonight’s class! (Hands-on)

It’s a real challenge cooking small portions of recipes and keeping
it interesting and easy. Today we explore ways to plan and prepare a
variety of healthy and tasty meals in single or double portions perfect
for little batches. Shopping tips, recipe adapting and freezing
techniques will be discussed as we prepare a yummy menu including:
Quick Tomato Basil Soup, Rostisserie Chicken Enchiladas, Anything
Milanese, Eggplant Adovado, Cheese & Jalapeno Skillet Cornbread,
Fennel Au Gratin, Kwik Krumble. (Hands-On)
