BURGER LOVER’S UNITE

“WORLD BURGERS”

Chef Johnny Vee scoured the planet for the best burger recipes in the
world and tonight we celebrate everyone’s favorite summer sandwich.
We will make a variety of sides and sauces including: Tomato Jam,
Homemade Mayo, Korean Pickle, Zippy Burger Sauce, and
Horseradish Blue Cheese Burger Sauce, as well as Rochester-
New York Burgers, Salmon Burgers with Thai Tartar Sauce, Lamb
Burgers with Feta & Mint, Steamed Pork Bun Burgers with Hoisin,
and Green Chile Cheeseburgers of course. Homemade Burger Buns,
Truffle Fries and Beer Batter Onion Rings round out our menu with
Whoopee Pie Ice Cream Sandwiches for dessert. YUM! (Hands-On)

By popular demand, a class to introduce our students to the basics
of good knife skills; holding, chopping, sharpening, and knife
storage. We will practice cutting a variety of vegetable shapes,
including dice, julienne, mince, and brunoise. Students will receive
a 10% discount on knife purchases on the day of the class.

Fans of barbeque won’t want to miss this class where the fine
art of the ‘cue is explored with Chef Josh Baum from Johnny
Vee’s favorite BBQ joint. Josh shares tips and hints for getting
the most out of your smoked meats as we prepare a menu of
goodies perfect for kicking off the summer season, including
Green Chile Cornbread, Cowboy Beans, Green Chile Slaw, and
a variety of smoked meats & ribs slathered with Josh’s Secret
Sauce. We will also demonstrate the Cameron’s Stovetop Smoker
that gives great smokey results in your home kitchen. (Hands-On)

Chef Johnny Vee describes Max’s as Santa Fe’s most provocative and
exciting restaurant. Join talented young chef/proprietor Mark Connell
as he shows us some of the wonderful dishes that are getting raves
from his many fans. Our menu includes: Baby Beet Salad with Orange,
Goat Cheese & Brown Sugar Vinaigrette, Sturgeon Fillet “Sous Vide,”
with Baby Artichokes, Snap Pea Salad, and Confit Potatoes, and for
dessert Warm Coconut Tapioca with Exotic Fruits. We will demo the
amazing Sous Vide Supreme Water Oven available at Las Cosas.
